What is a suitable meal for vegetarians?

I am hosting a diner party that will include two couples whom are vegetarians.

A good meal for vegetarians could start with a hearty soup, like squash soup. Salads with bread would follow. For the main course, have grilled vegetables served over rice.

Depending on the strictness of their vegetarian diets (do they eat milk, eggs or cheese? ), your menu may need to be varied. A good standard for your main course is something filling that's comprised of grains and vegetables, such as mushroom risotto. Remember to amend any animal ingredients such as chicken stock for vegetarian alternatives to suit your guests' diets.

I suggest making something with portabello mushrooms as the main ingredient (i. e. stir-frying it) and having some salad or cooked greens on the side. You can cook tofu with a variety of vegetables also, but I would avoid any fake meat products, as they are harmful to the environment. You can include some starch by making a potato-related dish too.

It would depend on how strict a vegetarians they are. You can't go wrong with beans and vegetables in a casserole. Just keep away from dairy meat, fish and chicken.
