Phospholipids are molecules with a hydrophilic head (attracted to water) and a hydrophobic tail (repulsed by water). When mixed with water, phospholipids form spheres known as "micelles" in which the hydrophilic heads of the phospholipids are positioned at the surface of the sphere while the hydrophobic tails are positioned in the center of the sphere (protected from water).
