Have a nice fancy dinner for your dad. Set it up in a formal manner, with good food and good friends to help in the celebration. If your dad is not into anything "fancy" have a nice barbeque.

You could goskydiving. Or the strip club. Something fun and something that he/she has not done before. Take a nice trip to italy, or vacation somewhere nice and warm.

How about inviting a bunch of your Dad's friends and going to Las Vegas for the weekend? There is so much to do there. Not everyone likes to gamble, but there are shows, great food and lots of diverse entertainment.
