Smith Rock State Park in Redmond, Oregon, has many stunning hiking routes and picnic areas. Salt Creek Falls is located on Hwy 58 between Hwy 97 and Eugene and is also beautiful. Alternatively WanderlusTours give half-day guided tours in Bend, which is riddled with underground lava tubes, or caves.

From what I've seen there are several bed and breakfasts in Oregon. Treat her like a princess for a weekend, give her a foot massage, order room service, do anything she asks ;)
