Why don't guys sit when they pee?

With their specific anatomy, it is easier for them to stand and pee. Plus I think it takes less time that way, maybe they are a little lazy, or maybe it is just that they don't want to pee on their legs, and it is easier to aim standing up.

Some guys do sit when they pee, but generally it is much quicker to just stand. It's less icky in public bathrooms, too.
