When is the best time to harvest jalapenos?

They're OK to eat at any stage that you want them. The little woody veins that develop are called "corking" and are a sign of approaching maturity and usually also one of increasing heat levels. Try picking them full red but generally still firm. The flavor is much better when they are red ripe, sweeter and more complex.

You should harvest jalapenos whenever they are red but completely firm to the touch. They may be hotter this way, but in my opinion, they are much tastier this way.

The ideal time to harvest jalapenos is when they are a dark green color. This is when they will be the hottest. Make sure not to let them turn orange or they will lose most of their heat.

ok thax i have planted some and i have one that is now about 4 or 5 inches long it is a dark green color though......ahould i wait a little longer??  add a comment
