Organic does not simply refer to what is being harvested, but how. For example, for food to be deemed organic it must meet certain criteria (pesticides, genetics and harvesting techniques).
An organic harvest, is a product of a farming method that applies only natural products to feed it or prevent it from destruction. The use of manufactured fertilzers or pest controls are not applied to organic harvests.
