You will know when your winter squash is ready to harvest when you press it hard with your fingernail and cannot make a dent in the outer skin. Not all winter squash have green stripes. Make sure you harvest before first frost.

Yes you can harvest the squash with green stripes but you should harvest it in the early spring months. That's when it grows best.
