What should I know before dating someone who is divorced with children?

You should keep in mind that his children will always come first and that regardless of what he tells you he will forever be connected to the other person. They will be co parents for the rest of their lives and those children's needs should always come first. Harsh but reality.

You should find out the opinon of the children, and how close they are to the other spouse. Starting a new relationship is hard, but having kids that hate you while you do it is damn near undoable. If the kids are young you have to get use to the idea of the other spouse being around for quite awhile.

Make sure you are comfortable around kids. Prepare yourself to meet the children some day soon if all goes well. Be sure to act interested in the children and remember their age and interests. Also, remember that dates may have to be worked around the children's schedules. They may have them that weekend, etc.

The most important thing to remember is that their children will always come before your needs, which can be a challenge for new couples with existing children. You may also have to deal with issues with their mother and his ex-wife as you would be a part of her children's life (it depends on how well they divorced).
