Mesquite is the preferred wood to use for a barbeque. It has a unique flavor that produces a tangy smoke that can permeate the item being cooked. When used for beef or chicken, the result is a succulent, western-flavored meat that retains the smokey flavor when eaten. Mesquite wood is a hard wood, and supplies a long, perfect-temperature burn.

My personal favorite is Coffee Wood. You are correct that wood affects flavor, so when choosing the wood, make sure it compliments the food being prepared.

Mesquite is possibly the best smoking wood for barbecue. It gives a heady, savory smoke, without adding a bitter tar like aftertaste. Other woods that are good for smoking are,in given order; hickory, maple, apple, cherry and cedar. Cedar is my least recommended since sometimes it gives a sappy, bitter aftertaste.

Depends on what you are cooking. For beef you could use mesquite. Chicken you could use mesquite or apple wood. For pork you could use apple wood or cherry wood.
