Mesquite and oak are two very good choices. IF you can find them, hickory chips also add a nice flavor to your food. Mesquite compliments spices and gives a bit of a smokey flavor, oak makes a bolder statement, and hickory is really rather unique. It really depends on what taste you are after.

You can add oak wood to a barbecue to give your food a good taste. I personally like to add mesquite wood to mine because I love the smell of it and it ends of making the food taste just fabulous. Some people like to use hickory wood too. It leaves a good taste on food when used.

Well when you want to add smokey flavor to your grilled food you can add any wood you want really. I like fruit tree woods like apple. Other popular woods include alder, hickory, maple, mesquite, and pecan. It all depends on what flavors you like. Try them all.

Hickory chips soaked in water are great! It gives the meat a nice smoky taste. You want to make sure the chips are soaked in water so they dont burn.
