Moist cooking refers to any sort of cooking done with liquid, also so known as "moist heat cooking." Moist cooking can be done with water, broth, wine, any sort of liquid. Some methods of moist cooking involve steaming, braising, poaching, simmering, boiling. The benefits of moist cooking depends on which method you choose.

Moist cooking means cooking with moisture whether it is steam, added liquid or water. Cooking temperature are much lower, anywhere from 140 - 212F, because water does not get hotter than that. It involves boiling, simmering, poaching, steaming, stewing and braising.
