What are some advantages of simmering versus boiling?

Simmering allows slower cooking of the food and generally the food doesn't lose the taste (boiling vegetables dilutes the taste). Also simmering is done with lower temperatures which preserves the vitamins in food.

When you boil food it tends to leech out taste which can be helpful when adding sauce but can also take away from your dish. Simmering keeps flavor and nutrition.
