Irregular shapes are just that irregular. They are not clearly defined. For example you know what a square or a triangle is. But what do you call a shape made up of a bunch of different shapes? Some do not have actual names, so they are known as irregular. A lot of attest are very free flowing, in their shapes.

An irregular shape is one that is organic and that you might not normally see; it doesn't have a name like circle or square, it could be curved or have corners. Irregular shapes are relevant in many works of art.
