What does it mean if a ring is marked STERLING instead of .925? Does the mark date the ring?

I'm not sure if "sterling" means sterling silver.

Both markings mean the same thing and are used interchangeably. .925 refers to the silver content of the item, meaning 92.5%, which qualifies it as sterling silver.

Sterling is silver, it just has more filler metals in it than .925, which is a higher grade. Mark does not date the ring.
