Soft cheeses are mildly flavored and high in moisture;Semi-soft cheeses are slightly stronger in flavor;Semi-hard cheeses has even bolder flavors and is often paired with fruit; Hard cheeses are the most familiar which includes parmesan cheese.

Well there is many diffent types. There are soft chesses witch would consit of cheese like Brie, Kuntener, Coupole, Nettle Meadow Kunik. Hard or firm cheese witch consit of Roncal, Romano, Gouda. Some other cheese are blue cheese, goat cheese, Feta cheese, Cheddar cheese, Provlona, Parmesan, Gorgonzola, Affidelice, Flada. These are some of the many types of cheese.

I probably can't name them all, but the ones I know of are American, Pepper Jack, Cheddar, Sharp Cheddar, Swiss, Baby Swiss, Munster, Jalapeno. There's tons.
