What are some tips on how to barbeque?

You are apt to have best results by marinating the meat hours before you cook so that sauces really have a chance to penetrate the meat, waiting to be sure the grill is hot before putting the meat on the grill, and covering the meat while it cooks so that flavors and moisture are retained.

I think it is wonderful to make your own sauce, try Carolina style for something slightly different. You can use dry rubs, or good old bottled sauce. If you can, BBQ over wood, or at least add some hickory, mesquite or apple chips- you soak them in water.

make sure u have plenty of coals. the meat has been marinated for a few hours. start with the slow cooking items first like beef and fast cooking items like shell fish.

To ensure barbecued pork ribs are cooked all the way through, boil them for about 20 minutes the day before. Then let the ribs sit in marinade overnight. Grill them over medium heat, watching that they do not burn.

Find a good sauce and seasonings you like. You should be doing dry rub, and then applying sauce when there's about fifteen minutes of grilling left.
