Do not be afraid to prune away. Bamboo can be very invasive if it isn't kept in check through regular and generous pruning. Keep roots from spreading by adding physical barriers under your soil.

Bamboo is a very hardy plant. Here in the south bamboo is everywhere and you can actually cut it all the way down to the ground and it will come back up. If you just want to shorten your bamboo a bit snip it just below one of the rings.

It is impossible to overprune bamboo. If the stand has become overgrown, matted, dry and ugly, it is probably time to prune. Simply chop off all the stalks at the ground, and clear the area of dry remnants. The bamboo will regenerate, green, strong and healthier than ever.
