You could make brushetta with marinated tomatoes, onions and celery on top of Italian bread. Eggplant rollatine has ricotta cheese rolled inside of eggplant and then baked and topped with marinara sauce. Mozzarella sticks, breaded cheese fried and served with a nice dipping sauce. a little more difficult but wonderful is spiedini, all are vegetarian.
