Sage is a really good herb that goes great with pork. You can also try pairing onions with it to give it a sweet and savory taste. Cherries are another great flavor to use with pork. You can try to tie the apples and pork together by using just a dash of cinnamon or nutmeg in the pork. Good luck!

Pork, as with any meat is very easy to season. Common seasonings are pepper, garlic, paprika, salt, cinnamon, and lemon. To contrast with baked apples I would recommend mixing a combination of garlic, salt and lemon pepper and rolling the pork in it, this creates a nice coating for the meat.
