Depending on how detailed you want you could make book shelfs, or toy chests for your children, you could make shelving for the house, Rocking horses are a pretty advanced and detailed project that are fun to work on.
Well you can basically make a mural or carving with woodworking. For example, carve out an elephant entirely out of wood. It is very advanced to do so good luck with that.
You could try building something more complex like a wadrobe instead of a dresser or book shelf. It would also allow you to do mor intricate woodworking and design if you are interested in that.
Since you'll be working with your Dad, why not make something that would become a family heirloom such as a treasure chest, buffet, bookshelf, or coffee table.
