There are seven basic types of cheese - Fresh Cheeses, Natural Rind, Soft White Cheese, Semi-Soft, Hard Cheeses, Blue Cheeses, and Flavored Cheeses. If you add up all the varieties, there are 670-900, depending on who's counting.
There are so many different cheeses they couldn't all be named here. A few are Brie, Cheddar, Gruyere, Provolone, Swiss, Goat, Head, American, Mozarella, Guda, Pepper Jack, Parmesan and Romano.
There are also cheeses made from different kind of milk. The richest cheeses are made from sheep's milk, after that would be cow's milk, and last goat's milk.
