Boil chicken broth to cover the chicken. For every quart of liquid, add 1 cup each chopped onion, carrot and celery. Season the liquid lightly with salt and peppercorns. Lower the heat to a simmer. Check with a food thermometer, the temperature should be 190 degrees. Cook until cooked through, about 45 minutes to an hour for a whole chicken.
