This process is called "Porting" a number. What you have to do is ensure that you are completely out of contract with Metro PCS, if you are still under contract this could cancel your contract and you would be responsible for any early termination fees. Otherwise, all you need to do is contact your new provider with the number!

All you need to do is cancel your current service and let your next service provider know that you want to keep your old phone number. Most services charge a small fee.
