A no fail way for any wild animal is to sear it in butter. You could also add various spices or marinades, even beer works well with most wild game. Another good way is to put it in the crock pot with various vegetables and spices.
You could stuff and roast it, I find my family prefers it stewed in the crockpot with lots of hearty vegetables. I start out skinning it and removing as much fat as possible, the little critters carry a lot of fat. I cut it up, cook it and add vegetables.
Skin, clean and cut the scent glands, head, feet and tail off. Rinse, divide into sections. To cook, fill a pot with enough water to cover the meat, add whatever else you might like, and boil for an hour.
