The only trick to installing moulding around a pocket door is to ensure that the moulding and the nails/screws holding the moulding don't impede the functioning of the door. On the door side you might consider using adhesive to hold the moulding to the wall.

You can tack it in as you would anywhere else with trim. The pocket door is actually a wood frame that you can nail into at the edges.
