For most games on the Nintendo DS, there are two screens. One screen is the interactive screen that responds to the stylus and the other is a regular screen. For certain games, the interactive screen just functions like a regular screen, and for some it is more like a menu.

Yes, there are now a wide variety of Nintendo DS's that are out, and all of them have 2 screens. One is a touch screen, the other is regular. The different models are the DS(original), DS lite, DSi, DSXL, and coming soon the 3DS, which has 3D.
