Will any brand game controllers work on any system?

Usually console controllers can't be interchanged within systems. There exist adapters to fit one controller on almost every other console. Also USB controllers may work with the console and PC.

While several independent companies make controllers for the current generation of game consols, it is important to realize that each console has it's own proprietary connectors such that an Xbox 360 controller will not work with a PS3 and vise versa.

No. Only controllers made for a specific console system will work on that specific console system. For example, Playstation controllers will not work for XBOX or Wii consoles. There are other companies that make controllers for each system, but when an off brand makes a controller it will still only work for the one system it's designed for.
