I heard that the way traditional orthodox Jews dress (e.g. long black coats and black hats) is very similar to that of 17th century or 18th century Polish noblemen. Jews probably dressed that way to assimilate. The style of dress is not rabbinically or biblically required.

Orthodox Jews dress as they do because they have decided to replicate the dress of 17th and 18th century Jews in eastern Europe. They eschew vanity and modern ways.

Black is the color of "Gevurah", making it the appropriate attire for their duties such as prayer. It is a representation of their devotion to heaven.
