Peanut butter's inveentor is unknown. George Washington Carver is--somewhat incorrectly--given credit for inventing peanut butter in 1904. However, peanut butter-like substances have existed for centuries and can be traced back to ancient China, though that peanut butter did not resemble today's version greatly. Dr. George Bayle began selling a more modern form a peanut butter in 1890.

It's an urban legend that it was George Washington Carver. The actual person who holds the first patent was named Marcellus Gilmore Edson, who registered it in 1884. Improvements were made by J.H. Kellogg in 1897, and the peanut butter machine was patented by Dr. Ambrose Straub in 1903.
