It is best to pick butternut squash right before a major frost. Usually when the vine dies, goes brown, and the stems crack, I know it is optimal to pick for storage. Also, make sure there is no green streaks running down the squash.

Butternut squash is a winter squash. It is kind of like a pumpkin. It is best to pick them when the vine starts to turn tan and crackled looking. Some people also pick theirs after the first frost. it is to your discretion if you think it is ripe at either point.

The best time to pick them off the vine is when the outside shell is hard when you knock on it and they are a peachy buff color.

Butternut squash can be used unripe or fully ripe. For ripe use, pick the squash when the fruit is completely tan without any green. Leave the stalk attached to unblemished fruit for indoor storage up to 6 months. Butternut tastes best after 3 months of storage.
