Any green stripes down the side of the squash should be gone; the fruit should be a solid tan color and the inside flesh should range from yellow-orange to orange. If you're still not sure, let the fruit sit on the vine till the vine dies before picking.

You make sure that is not a bright yellow, and not too dark of a yellow. Tap on it and it should sound hollow.

When buying any kind of squash, you should choose one that feels heavy for its size. That is how you know it is ripe.

Butternut squash changes color from a light beige to a deep tan when riped. The size should be 8 to 12 inches in length. Another indicator is that the green stripes on the rind should be very, very faint when it is ripe. If the rind is easily punctured with a thumbnail then it is too ripe.

Most butternut squash has been cured, by the time it arrives at the supermarket. Butternut, as well as most winter squash cure naturally in about three weeks after harvest.

Well, if it is tender to touch then you know it is ripe. Also pay attention to the color. A lighter color means the squash has become ripe and is ready to eat.
