You should not start pruning apple trees until they have produced fruit and are considered mature. Then prune them once a year, in the late winter or early spring when the trees are dormant. Don't prune in the fall bacause the it will force the tree into a growing, when it should be getting ready for a restful winter.

Fruit trees are pruned when they are dormant. Prune apple trees in late winter or early spring. Prune the older trees first.
