What would be the result if I soak meat in vinegar and water?

If you soak meat in vinegar and water, the meat gets tenderized. The acid in vinegar softens the texture of the meat.

If you are using water to avoid imparting other flavors, mix 1-2 T. vinegar with 2 c. water. While your meat may be a little more tender, it will not have any flavor and may taste 'washed out'. Meats left to tenderize too long will also become mushy.
