What was the name of Old Mother Hubbard's dog?

Does it say in another stanza of the poem?

While not named in the poem, you can safely call him Henry. It is widely believed that this rhyme referred to Henry the VIII's desire to divorce Catherine of Aragon to marry Anne Boleyn. Mother Hubbard is Cardinal Wolsey, the bone is the divorce, the cupboard is the Catholic Church and the dog... is Henry.
