What temperature should fully-cooked chicken be?

Does it matter how I'm cooking it?

Regardless of cooking method, the internal temperature of chicken should always be no less than 160 degrees and no more than 170 degrees (to avoid dryness from overcooking). The best practice is to use an instant-read thermometer. They are inexpensive and efficient.

If you are cooking chicken in a pressure cooker the chicken is fully done after 2-3 pressures or else heat it for at least an hour or two so that the chicken is fully cooked. In order to make the chicken fully cooked you can also add lime juice in it and keep it in refrigator for half hour so.
