When your gas tank is nearing full the pressur inside the tank changes and is forced back up the hose. When the pressure is high enough the valve is released.
There is a fuel pressure sensor at the inside the gas nozzle. When the fuel pressure reaches a certain pressure the switch clicks off shutting the gas pump off.
