What kinds of food would you expect to come out of a "French country kitchen"?

I'm trying to pick the right theme for my restaurant.

You would expect plenty of fresh baby vegetables that are roasted. Plenty of butter and cream sauces, and lean meats that are roasted with plenty of fresh and dried herbs. Pastries are also found in abundance, ranging from heavy breads to light and flaky croissants. Whole Milk, cream and butter are a must.

In order to undertake this theme you must stereotype the french... something they wont take kindly to. :) In a typcal french country kitchen you would find many seasonal fruit and vegetables. Dishes include ratouille, boulliabaisse and confit de canard to name a few. meat must be cooked as rare as possible.

I don't think I would expect anything very fancy. Really good meat stews made with wine and a lot of fresh vegetables. Things made with eggs and really good crunchy bread and fantastic cheeses in many varieties. I would also expect wonderful smelling casseroles. Mainly, more plain than fancy but very, very good.

Fresh bread, butter, real meat, vegetables, real food. Things that are steamed or lightly sauteed. No deep fried anything. Seafood, cheese, crusty desserts. Pick up a copy of Julia Child's cookbook and play!
