There are many different alloys of stainless steel. Most common SS alloys are softer than mild steel. One of the best SS alloys is maraging steel. Tensile strength up to 350,000psi, perfect for gears but will not hold a good cutting edge for knives.

Stainless steel is actually the stongest metal you can get. There is not anything much stonger than it. If you are looking to put it in your kitchen I would deffinately reccomend it but it does get hand prints on it very easy. It does look very nice and shines well.
