What kind of fireplace insulation is best?

Minuteman insulation is pretty good. They have been around for a good while are fairly priced. If you don't want to go that route then try some spray foam it's just as good. It's cheap, durable and easy to do it yourself where as any sort of insulation would require contracting work.

It is best to have woodburning fireplace and for that it is a must to have a metal chimney because the tollerence is zero in metal chimney.
