Coming from someone who is also dating a shy guy, all I can say is that it takes time. The fact you two are dating is probably a miracle if he is that shy. Just give him time and don't push him. If you do, he might shut himself away.

Put him in a situation where he feels comfortable, like a sporting event, where there is less pressure than a one-on-one dinner.

Ply him with alcohol. Nothing reduces inhibitions better.
