It depends on what you're breeding for. You need at least one male to breed to the females. When they have the lambs make sure you're on hand to help if there are any problems.

Any sheep that have ever been breed around me were either done by artificial insemination or the ram goes out and does it I know some people keep a castrated ram that has breed before because he will let you know when the ewes are in season.

It depends on if you are breeding naturally if so then they will pretty much take care of it by themselves only the ram will know when the timing is perfect for the ewes to breed. If you are using artificial breeders keep a castrated ram to let you know when you need to breed.
