What do I look for when picking cantalopes from a garden?

Do you thump them?

Know what size your fruit is supposed to attain. Gently turn and look on the bottom, see if the part resting on the ground is still "green". Ripe fruit will be "discolored" there. I do thump, and I listen for a hollow sound, but really, lifting it is more accurate. If it seems heavy for it's size, it's probably ripe.

Look for one that has a yellow netting. Smell the bloom end, not the stem end. If ripe you will be able to smell it. Do not pound on it.

Cantelope needs to be a light color (not greenish) with a distinct texture. The melon should be just about ready to let go of the vine and the bottom is likely to be pale. They are not made of as much water as watermelons. Use your nose and sniff the stem end after you pick one. It'll smell wonderful.
