There may not be anything wrong with your horse. If the opossum consumed something a horse would consider a treat, it may not have digested thoroughly and the horse can still smell it. He thinks it's a treat. I would ask a local vet about the risk of parasites.

Whenever a horse exposed to opossum manure, it feeds on it. if we see an older horse feeding on opossum manure it has to be taken a greater care. The first and foremost treatment that could be given is the horse should be pastured immediately and should be fed with fresh grasses to satisfy its need.
