You should try working with a homemade fondant. You can make your own using marshmallow fluff and confectioners sugar. Once you get good working with the fondant, you can use cookie cutters to cut out shapes and put them on the cake.

For a young child's birthday cake, a carousel cake is a hit. Use either a two-layer cake, or angel food cake. Frost all over with white frosting, then make a carousel top from construction paper and use striped straws for the poles and animal crackers for the horses.
