Start with egg, chicken and tuna salad. All three offer a surprising amount of diversity for a beginning cook. As you gain experience, experiment with unexpected ingredients: dill, mustard, rice, water chestnuts, apples, raisins and grapes. Just a bit of cinnamon, nutmeg or curry adds surprising interest. Serve over lettuce or spinach leaves, as a sandwich or over toast.
