According to the USDA, pork is considered a red meat, but most of the fat is on the outside and can be trimmed to make it leaner. Pork chops or roast should be cooked to 160 degrees, medium, to 170 degrees, well-done. The USDA also recommends that ground patties and ground mixtures such as meatloaf be cooked at 160 degrees.
