I'm making homemade pickles. What advice can you give me for troubleshooting?

Here are some tips: brine always in a crock,stoneware or glass. (Nothing chipped). Never use metal utensils. Do not use old vegetables. Also, Brine cannot penetrate waxed cucumbers. Use them immediately from farm market or from picking. Check for bruises and mold. Use white distilled vinegar. Iodized salt darkens pickles.

The jars should be sterilized, either with boiling water or sanitized in a dishwasher. The cucumbers should be freshly picked for best flavor. Follow recipe to the letter.

Make sure that the orifice on the mason jars is big enough to hold several pickling cucumbers, otherwise there may be a lot of wasted space. Also, try and get pickling cucumbers from a local farmer or organic source because the ones in grocery stores often have a food-grade wax on them which can affect the pickling process.

I make homemade pickles often. The best tip is to use a vinegar solution with spices of your choice. Spicy pickles are always good, too.
