If an employee quits, do I have to pay him and let him work for two weeks?

This would depend on the laws in your area. If you live in an at-will state then no, if not then you will have to allow him to work.

No. Assuming this is an "employment at will" situation, meaning there's no employment contract or other binding agreement between you, you can fire him effective immediately if you want. The two-weeks-notice thing is an informal social standard, not a law.

If he is willing to work out the two weeks and you ask him to leave you should pay him for the two weeks.
