How should I go about making pumpkin pie for 500 people?

Get all the volunteer help you can, and that includes as many ovens as you can use from friends. I always use fresh roasted pumpkins that I pick straight from the vine, but if it's 500 people you're cooking for, I couldn't exactly recommend that.

No small task! You should buy the pies pre-made. If you are completely against pre-made pies, you should get family and friends to help make homemade pies! If you must do it all yourself, start baking two weeks in advance, pumpkin pies refrigerate well.

The process really depend son your materials. If you have an extra large oven and container for the pumpkin pie then just make accordingly to that size of pie just remember to add ingredients according to ratio and if not then make a large number of small pies.
